Arugula, Pasta & Sausage Dinner

Ingredients:

4 large sausages
1 green pepper (or red or yellow) (cut into thin slices)
1 large sweet onion, chopped into chunks
¾ large can of diced tomatoes
1 bunch of fresh arugula washed and root ends trimmed off
1 tbsp. vegetable oil
Sprinkle of dried hot chili peppers

Directions

Slice sausages into 1 pieces. Cook over med-high heat in vegetable oil. When just pink, add chopped green pepper and sweet onion and cook until start of tender. Add canned tomatoes and cook for approximately ½ hour. Serve over pasta.
