Beet And Arugula Salad

Ingredients:

2 med sized red or candy striped beets
2 med sized gold beets
1 bunch arugula
2 tsp. olive oil
1/2 tsp. white wine vinegar
fresh ground sea salt
fresh ground pepper
1 - 6oz log goat cheese (try herb or garlic)
2 tbsp. strawberry jam or perserves
1 tbsp. raspberry vinegar
1/2 c. toasted pecan pieces

Directions

Cook beets in boiling water or roast until tender. Peel and allow to cool. Slice each beet into 3 slices. Wash arugula and mix with oil, white wine vinegar and salt and pepper. Place arugula salad on each of 6 plates. Place a slice of cheese on top of the arugula. Top with a slice of beet. Add a second slice of cheese. Top with the next beet slice. Mix together strawberry jam and raspberry vinegar. Drizzle over the beets and arugula and garnish with pecans.
