1 bunch of rapini, chopped coarsely
2 cloves garlic, minced
4 anchovies, chopped
1/2 c. olive oil
1/4 tsp. hot pepper flakes
1 lb. pasta (original reciped calls ororecchiette pasta)
Place rapini in boiling, lightly salted water. Cook until wilted, about 2 minutes. Remove from heat and drain well. Heat pan with oil and add garlic, hot pepper flakes and anchovies. Cook until fragrant, about 2 minutes, but do not brown. Add rapini and cook for 2-3 minutes, until tender. Mix in pasta. Serve immediately.
