10 Quick Ways With Carrots

Directions

When sliced, carrots usually need 6-8 minutes cooking in chicken broth or water.

ORANGE SAUTE
Saute 2 c. grated carrots in 1 tbsp butter, 1 tbsp brown sugar & 1/4 c. raisins until most of the liquid is evaporated. Serves 4.

ITALIAN SALAD
Toss 3 c. grated carrots with 1/4 c Italian salad dressing and 1 tsp capers. Serves 6.

ALLSPICED
Drain 2 c. cooked sliced carrots. Return to saucepan with 1/2 c. orange juice and 1/4 tsp allspice. Saute until juice is syrupy. Serves 4.

CREAMY CUMIN
Toss 2 c. cooked sliced carrots with 1/2 c. sour cream or plain yogurt and 1/2 tsp. cumin. Serves 4.

ONION TOSS
Toss 3 c. cooked sliced carrots with 1 tbsp butter, 2 sliced green onions and 1/4 tsp mace. Serves 6.

GOLDEN ROAST
Cut carrots into 2 inch pieces. Place in pan juices around roast for the last half hour of cooking.

LIGHT ORIENTAL
Saute 2 c. grated carrots with 1 clove crushed garlic, 1 tsp soy sauce, 1 tsp sugar and 1/2 tsp lemon juice. Serves 4.

DILLED PUREE
Cook 2 c. sliced carrots in 2 c. chicken bouillon and 1 tbsp fresh dill. Drain and puree. Stir in 1/4 c. sour cream or plain yogurt. Serves 4.

QUICK CARROT SOUP
Simmer 2 c. sliced carrots in 2 c. chicken bouillon, 1 c. milk, and 1/4 tsp. ground ginger until
very tender. Puree in food processor until smooth. Serves 6.
