Carrot Pineapple Muffins

Ingredients:

1 c. all purpose flour &; 1/2 c. whole wheat flour or 1 1/2 c. a.p. flour
1 c. white sugar
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
2/3 c. vegetable oil
2 eggs
1 c. finely grated carrots
1/2 c. crushed pineapple with juice
1 tsp. vanilla

Directions

Beat eggs and oil together. Add sugar and vanilla. Mix dry ingredients together. Add dry ingredients to oil mixture. Add carrots, pineapple and juice. Bake at 375 for 20-25 minutes. Tastes great with cream cheese icing. (SEE CARROT CAKE RECIPE)
