Carrot Soup

Ingredients:

8 cups chicken stock or broth
1 large onion, chopped fine
4 tbsp. butter
2 1/2 lb. carrots—diced
2 stalks celery with leaves, diced
1 tsp. salt
Pinch cayenne pepper
1/4 tsp. black pepper
1/4 c. chopped fresh dill + 2tbsp.

Directions

Cook onion in butter until tender on low heat. Add other ingredients except 2 tbsp. dill. Bring to a boil and reduce heat to medium and cook until carrots are tender (approx. 40 min.) Put entire mixture into blender and puree. Put back into a pot and cook for another 15 minutes. Option– make a cream topping whipping 1/4 cup whipped cream and add 1/2 c. sour cream. Add a tablespoon of this mixture on top of bowl at time of serving. Garnish with the extra 2 tbsp. of fresh chopped dill.
