Carrot, Orange & Cilantro Soup
1 tbsp. vegetable oil
1 lb. carrots
1 medium onion, chopped
2 medium oranges, grated and squeezed
2 c. vegetable or chicken stock
2 tbsp fresh cilantro, chopped
1 tsp salt
Pepper to taste
Heat oil in soup pot. Add the carrots and onion. Cover and sauté on low heat for 10 minutes without browning, stirring occasionally. Add orange juice, rind, stock, cilantro, salt and pepper. Bring to a boil. Cover and simmer for 45 minutes.
Cool slightly. Pour soup into a blender and puree until smote. Return to pan and reheat. Serve hot.
