Carrot Cake

Ingredients:

Part 1
2 c. white sugar
1 1/4 c. vegetable oil
4 eggs

Part 2
2 c. all purpose flour
1 1/2 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1/2 tsp salt

Part 3
3 c. grated carrots
1/3 c. chopped nuts
8 oz. drained crushed pineapple

Directions

Mix part 2 and set aside. Mix part 1, beating well after each egg. Mix part 1 into part 2 and fold in part 3. Bake at 350 for 60 minutes (bundt pan) or for 2 8X8 pans for 45-50 minutes. Cool then add icing if desired.

ICING (double for 2 8X8 pans)

4 oz cream cheese, softened
1 tsp vanilla
1/4 c. soft butter
1 1/2 c. icing sugar

Beat until fluffy. Add icing sugar and spread.
