Linguine With Arugula, Pine Nuts & Parmesan Cheese

Ingredients:

1 lb linguine
1/2 c. olive oil
4 oz. arugula, trimmed
1 cup grated parmesan cheese
1/2 c. toasted pine nuts
Additional parmesan cheese

Directions

1. Cook linguine in large pot of boiling salted water until tender
2. Meanwhile heat oil in heavy skillet over med. Add arugula and stir until wilted, about 30 seconds.
3. Drain pasta and return to pot. Add arugula, parmesan and pepper. Toss well.
4. Transfer to a bowl. Sprinkle pine nuts and extra parmesan cheese.
